Pizza Oven Flue Maintenance – don’t leave your customers wellbeing to chance
When pizzas are you business, you need to ensure your wood oven isn’t out of action for any length at time.
But if you don’t get it swept regularly, you’re putting your livelihood, your staff and your customers all at risk.
Why?
Burning logs and wood products produces large volumes of soot. This needs to be removed periodically otherwise you could end up with a chimney fire and potential Carbon Monoxide poisoning.
How?
Firstly the soot can catch fire. If you have a soot fire in a flue system, more often than not the only way to extinguish it is for the fire brigade to squirt water into the flue from above. This results in large volumes of dirty sooty water entering the oven, the restaurant kitchen and pretty much anywhere in the vicinity.
Not only that, a flue system can’t cope with the temperatures it’ll be exposed to in a soot fire for more than about 20 minutes. Remember, that’s 20 minutes from when it ignites, not 20 minutes from when you notice. If you don’t have it entirely extinguished within 20 minutes of ignition, you need to have an entirely new flue system.
That’s a lot of expense, especially on top of the price of a new Pizza Oven that has been drenched by 30 gallons of dirty water.
Soot also restricts the draught. So spillage of fumes can drift into the restaurant as they can’t all be drawn away through the flue quickly enough.
It would be well worth getting the Carbon Monoxide levels checked in the restaurant at some point if your flue hasn’t been recently swept – you might be surprised what your customers are being exposed to.
Do you even have suitably placed CO alarms at ceiling and head level?
In terms of insurance, if the worst were to happen due to lack of maintenence as above, your insurance will not cover you in the event of fire or fatality as a result of the oven or flue system.

We make sure to keep your restaurant clean while working. Appropriate sheeting will be placed down, the oven sealed and any access in the flue sealed when sweeping so there is no mess and no cleaning up to do after us. Your flues will then be cleared of all the combustible soot! The whole process takes between half an hour and 2 hours, depending on the type and design of flue.
